01Extended harvesting
Cherries are picked in four passes over six weeks, so only fully ripe fruit leaves the slope. 140 pickers work the estate by hand.

02Pulping & parchment
Pulped within four hours of picking, then rested under parchment on raised beds until the moisture reads exactly right.

03Grading & profiling
Every lot is screen-graded and cupped. Only A1 grade beans continue; the rest go back to the estate blend.

04Sublimation
Brewed coffee is frozen to −40 °C and the ice drawn off under vacuum. Nothing is heated, so nothing aromatic is lost.
